Shelf life
About a week ripe. Wrinkled and soft is cooking tomato, not bin tomato.
Storage
Room temperature, stalk-side down. The fridge kills the flavour and the texture.
Freezing
Freeze whole — the skins slip off when thawed. For sauces only.
Edible parts
Skin, seeds and all. Green stalks compost.
